I love that we have a whole day dedicated to celebrating the women who raised us (mothers, stepmothers, grandmothers, aunts, sisters, surrogates). For many of us, this person is our greatest influence; an emblem of light, love, and compassion. The creator of Mother’s Day, Anna Jarvis, spent six tiresome years fighting for a national holiday to celebrate motherhood. If that doesn’t say thank you mom, I don’t know what does. However, the history of Mother's Day comes with an important lesson. In 1914, President Woodrow Wilson declared Mother's Day a national holiday, and by 1915 Jarvis dedicated the rest of her life to remove Mother’s Day from the calendar. She felt that the holiday was meaningless and became another day for Americans to fuel their materialistic addiction. Mother’s Day was created to truly express gratitude for motherhood and honor all the mothers in our lives. So how can we ensure this year’s Mother’s Day is imbued with love?

Lemon Almond Pancakes 

These pancakes are a true breakfast delicacy. They are grain-free and dairy-free so all the sensitive mamas out they have nothing to worry about.

INGREDIENTS

Dry

8 ounces Finely Ground Almond Flour ~ 2 cups

1 tablespoon Coconut Flour

2 ½ tablespoons Sugar 

1 teaspoon Baking Soda

¼ teaspoon Salt

Wet

3 eggs

½ cup Oat Milk

1 ½ tablespoon Lemon Zest

1 tablespoon Lemon Juice

1 tablespoon Vanilla Extract 

¾ teaspoon Almond Extract

Avocado Oil for the griddle

DIRECTIONS

1. - In a bowl, sift all the dry ingredients together. 
2. - In a separate bowl, beat the wet ingredients until well mixed. 
3. - Add the dry mix to the wet mix, stirring until no lumps remain.
4. - Heat the oil on a griddle. Once hot and the oil has melted, spoon   the pancake mix onto the griddle. The pancakes should be about the size of your palm. Flip the pancake when the bottom side is browned, about 2 minutes. Cook for just a minute more. The pancakes should feel set when you press into the center of them. 
5. - Serve with a generous helping of maple syrup. 

NOTES

1. - These pancakes are small so that they don’t break when you flip them, that would be what I call a breakfast tragedy. Paleo goods lack gluten, and therefore elasticity. This is not something you will miss when eating them, just make sure the pancake can fit on the spatula for breakless flipping.
